In order to produce tender, flavorful beef we must start with cattle that will thrive on forages only! GCQ is the ability of the animal to finish to a AA / AAA grade, providing nutrient-dense carcasses, on a grass only diet (meaning no grain in the diet…ever). Traditional phenotype selection does not apply, rather, smaller, big-gut capacity cows that are Tenent and A2 A2 milk certified, are the best.
