15 g starter is good for 1 lbs (450 g) dry bean. It makes 720 g tempeh (dehulled) or 3 x 240 g tempeh = $15 value . 240 g tempeh sells for $5 at store.
Dry bean cost $1 / lbs + starter $5 = $6.2 / 3 = $2 per 240 g fresh tempeh.
For consistent result, you need an incubator with thermo stat to control the temperate at 30 C for 20 hours then turn it off. It'll generate its own heat after 20 hours. I just use big plastic bin, a small heater, and Inkbird Heat Mat Temperature Controller C206T which cost $30 on Amazon. Or use oven and light bulb but it'll need poweful lightbulb and constnatly checking the temperature to ensure it's in 30 C range and not exceed 40 C.
Home made fresh tempeh is unlike store bought. The store bought tempeh tastes bland. Home made one is like a giant block of mushroom. It feels spongy and can cut nicely into thin pieces. It tastes like mushroom with hint of chicken with strong umami flavor. All it takes is 1 hour of work and 30 hours of fermentaion. You can make one big batch and good for months.
People complain about food inflation. If they can get off the as from TV, computer, smartphone etc, they will have time to make food. 1 lbs dry bean cost $1 and turned into 1.6 lbs of dehulled tempeh. It tastes as good as meat with similar nutritions. And cost a lot less.
