We are seeking a seasonal Cook to join our team of professionals at Big Hole Fishing Lodge, in Curventon, NB.
Essential Duties and Responsibilities include:
Prepare and cook buffet-style meals or individual dishes and foods
Baking a wide variety of foods, snacks, bread and desserts.
Prepare and cook special meals for clients (must be experienced cooking to ensure food allergies, restrictions and intolerances are adhered)
Prepare and clean work area.
Follow instructions from supervisor.
Follow Food Safe requirements
Be punctual.
Spend long hours on feet or standing up.
Be able to clean a large kitchen.
Have knowledge of local sanitation laws and safety regulations.
Be able to lift up to 30 pounds, and occasionally more than 35 pounds.
Qualifications:
1-2 years minimum experience
Clean background check
Upbeat, positive attitude
Clear Criminal Record Check

Our camp is located in a remote area and local staff live offsite in the community, though onsite accommodation is possible and can be included in the compensation package. A typical shift schedule is 6 days on 2 days off, commencing at 6 am until 3 pm.
Our camps are drug and alcohol-free workplaces.. All new staff are required to complete pre-employment onboarding orientations. Our camp team members include kitchen staff, cleaners, hunting and fishing guides, grounds maintenance, golf superintendent and general manager.

Oversee kitchen operations. Maintain inventory and records of food, supplies and equipment. May set up and oversee buffets. May clean kitchen and work area. Cooks specialize in preparing and cooking ethic cuisine or special dishes. Prepare sauces, salads and soups according to established recipes and make sure to store them correctly. Perform portioning and garnishing work to ensure an aesthetic appearance for each dish prepared. Measure and use the correct amount of ingredients to cook menu items.

Essential Duties and Responsibilities include:
- Support the delivery of the lodges game bird, fish stock and habitat management program
- Deliver on client expectations in line with a world class hunting, shooting and fishing facility
- Ensure delivery of safe and interesting hunts of various kinds, applying an innovative spirit of purpose for creating memorable shooting experiences
- Follow all Lodge policies and procedures as directed by the General Manager
- Ensure delivery of safe catch and release fishing expeditions
- General maintenance duties for the Lodge (repairs, painting, upkeep)
- Must possess a valid Firearms Possession & Acquisition license (PAL)
- Must possess a Boating license
- Must be able to lift 50lbs
- Previous experience fishing salmon
- Previous experience hunting upland style game birds (Pheasant & Partridge) would be an asset
- An understanding of working gundogs would be a distinct advantage
- Certification in the use of chainsaws, heavy machinery or other related habitat management equipment would be advantageous
- Must have outdoor skills and an aptitude for operating farm and outdoor machinery
- Ability to multi-task & work in fast-paced environment
- Excellent interpersonal skills and an ability to communicate clearly and confidently
